Cooking is easy with just a few simple ingredients – and you can eat healthy too. Garbanzo Salad 16 oz. chickpeas 1 large zucchini, diced 3 tbs. chopped cilantro 1 tbs. garlic 1/4 cup olive oil Juice from 1 fresh lemon A sprinkle of feta cheese Salt and pepper Combine all ingredients and marinate about 15 minutes.

‘Fresh and healthy’ is ‘easy and delicious’ too! Just try this and see for yourself. Sinfully Easy Peanut Butter Cookies By Green Monkey Chef 1 cup organic peanut butter 1 cup organic cane sugar 1 tsp. baking powder 1 organic egg 1 tablespoon chopped organic peanuts Blend all ingredients.  Roll into 2 oz. balls and press cross-wise with fork.  Bake approximately 14 minutes at 350 degrees. Makes a great after school snack. Enjoy!

Granola with Raisins Dates and Almonds

Fresh homemade granola for after-school-snacking.

Try this delicious, nutrient-dense after-school-snack using organic, fresh ingredients. Granola with Dates, Raisins, and Almonds 2 cups rolled oats 1/2 cup ground flaxseed 1/2 cup wheat germ 1/2 cup chopped almonds Pinch of salt 2 teaspoons cinnamon 1 vanilla bean 1/2 cup honey 3 tablespoons butter 1/2 cup chopped dried dates 1/2 cup raisins  Preheat oven to 325 degrees. Combine oats, flaxseed, wheat germ, salt, 1 teaspoon cinnamon, and almonds. Melt butter in a separate bowl and add contents of vanilla bean. Add honey to the oat combination and stir until evenly coated.
